Warm memories came rushing back to me
as I stand amidst the wild flower in the meadow

The mountains silhouette against
the clear blue sky
The sea a pale translucent blue
The mountains bring forth
A sense of solitude and
the sea hugs me in lullaby
The clouds gather and part
The tide ebbs and flows
And yet I'm still here
Intoxicated in the tranquility
of this moment
As dusk settles in
I'm still reluctant to leave
this sweet sanctuary
of my heart and soul
the clear blue sky
The sea a pale translucent blue
The mountains bring forth

I'm standing, at the edge of cliff
Looking down, the the ocean below me
Aint it funny, how calm and soothing
this minute be?
when all at once it might turn into
a devil's roaring, tearing and devouring u
pulling u deep into the darkness
into the depth of the sea
so deep u wont be able to fathom
There's nowhere to reach to
nobody to pull u up
nothing u can hang on to
U cant shout
U cant scream
U cant breathe
U suffocate....
A gentle breeze, like mama's hand
carressing my face, so lovingly
I woke up from the daze
I can hear mama's voice from heaven
"My dear, be strong...be strong...be strong..."
echoing in the air.....

Yee Sang 七彩鱼生
Ingredients:-
Fresh Salmon slices ( I bought it from Jusco)
carrot shreds
red cabbage shreds
pear shreds (soak in ice-cold water for for few minutes)
coriander leaves coarsely chopped
green salad shreds
pamelo flesh ( I use grapefruit)
sesame seeds, toasted
peanuts, toasted and grounded
crispy red fermented bean curd chips (refer recipe below)
Sauce:-
Honey (i use Manuka honey)
plum sauce
Olive oil
lime juice

For the cripsy chips, at first I followed a recipe published in a newspaper, but the chisp was not cripsy but chewy instead,and turned hard when cooled. No choice, I created with my own crispy red fermented bean curd chips recipe.
To make crispy red fermented bean curd (Nam Yue) chips:-
egg 1 (light beaten)
red fermented bean curd/Nam Yue 1 (mashed)
a pinch of salt
Spring roll skins
1. Well combine the egg, red fermented bean curd and add a pinch of salt.
2. Spread the mixture on the spring roll skin.
3. Fold and cut into small strips, deep fry till golden brown.
4. Store in air-tight container before use.

occupational hazard!
A tired body brings out the worst in me: short fused temper,; grumbling; sour faced; nagging; complaining; ..every bad things u can think of!
Blame it on occupaational hazard ! After yrs of hardworking, every illness is showing up ..calcaneal spur, in other words arthritis in legs and fingers,..and oh , everything!dunno what to say. feeling so tired.
